Tirunelveli Halwa

INGREDIENTS

Broken wheat : 500 gram
sugar : 500 gram
ghee : 250 ml
Cashew nut : 100 gram
Cardamom powder : 2 and 1/2 spoon

Method of Preparation:

  1. First we have to soak the broken wheat in water for 8 hours or overnight. After soaking grind it in a blender or grinder with enough water to a fine paste for extract the wheat milk. Now strain the wheat milk by using strainer. Then, grind the leftover one with water for one more time and strain it. Then, discard the scum.
  2. Now, leave the wheat milk for an hour. Then discard the clear liquid carefully. Then, add on the counter top without disturbing for an hour.
  3. Then, discard the clear liquid carefully. Add 1 liter of water to thick wheat milk and mix it well. Meanwhile, take 200 grams of sugar in a non-stick pan or heavy bottom pan with 100 ml of water allow it to boil it. Then, add the remaining sugar in a separate pan with 2 tablespoon of ghee and heat it. Stir it and caramelize the sugar and keep it aside.
  4. Now add the wheat milk to the sugar syrup and mix it well. Once the wheat milk becomes slightly thick add the caramelized sugar to the wheat milk. Then, start adding the ghee slowly and stir it continuously. Then, continue adding the ghee slowly in regular intervals till it reaches the consistency of Halwa. Then leaves the sides of the pan. Put off the flame. Then fry cashew nuts in ghee and add cardamom powder and fried cashews in to Halwa. Mix it well. Serve it warm. It’s very delicious, mouthwatering, and delightful. Enjoy!
